Tasting notes

Very dense ruby ​​red. Complex nose with ripe fruit of plums, cherries and black berries, refined by nuances of toasted bread, coffee, cocoa and tobacco. Full on the palate with velvety tannins. The long finish is accompanied by notes of mint and dark chocolate.

Details

Malbec is a newcomer among the grape varieties cultivated in Italy! The name "Vie Cave" comes from the traffic routes that the Etruscans dug in the tuff of the Sovana region in ancient times - around the vineyards of today's Fattoria Aldobrandesca.

Recommendation

The Malbec wines, which are particularly well known in Argentina, go excellently with grilled beef, but also enhance autumnal venison entrecôte with porcini mushroom sauce, pasta with a strong Bolognese or brasato from the oven.

Vinification

After gentle pressing, the must is placed in steel tanks. The three to four-day cold maceration at 5-10 °C is followed by temperature-controlled alcoholic fermentation. The wine then goes through malolactic fermentation and a ten-month rest period in French oak before it matures for a further few months in the bottle.
