Details:

The Bordeaux blend from Tuscany caused a stir in 1985, and this has not changed to this day. Modernized yet fully committed to regional tradition—this is a wine you should experience at least once in your life!

Recommendation:

Particularly suitable for veal, such as a juicy chop with sage butter.

Vinification:

After manual harvesting in 15 kg crates, the grapes were sorted both before and after destemming on double sorting tables, then gently pressed. In addition to manual sorting, optical grape sorting was introduced in 2016 to further enhance selection quality. Each grape variety and vineyard parcel was vinified separately. The alcoholic fermentation lasted one week, partly in stainless steel tanks and partly in cement vats at temperatures below 25°C, followed by a total maceration period of about 10-15 days, so that the total time in these vessels was approximately three weeks. The malolactic fermentation primarily took place in oak barriques (70% new barrels and 30% second use). The wine aged for about 18 months in the barriques stored in the temperature-controlled wine cellar of Ornellaia. After the first twelve months, the blending of the grape varieties took place, followed by re-filling into the barriques, where the cuvée remained for another six months. After bottling, the wine aged for an additional twelve months in the bottle before being released to the market.
