Vinification
The grapes are harvested at the right level of ripeness and vinified in temperature-controlled stainless steel tanks. The maceration, which is carried out at temperatures of no more than 28°C, lasts 8-10 days. Malolactic fermentation is completed at the beginning of winter, followed by further aging in steel tanks for eight months and an additional four months in the bottle before the wine is released to the market.
