About Matcha
Like green tea, matcha is made from the Camellia sinensis plant. However, the cultivation and production processes are very different.
The plants used for matcha are mostly shade-grown, which creates a unique nutrient profile and higher concentration of ingredients, as well as a distinctive taste and color. Additionally, unlike green tea, where the leaves are dried, matcha powder is made from ground leaves. This means you can enjoy the nutrients of the whole tea leaf. What's more, by mixing your Prozis matcha powder with water or milk or adding it to your recipes, you're consuming the whole leaf, rather than using a tea bag and then throwing it away.
Matcha Latte
Ingredients:
• ½ –1 tsp Prozis Matcha Powder
• ¼ cup hot water
• ¼ cup warm milk or plant-based beverage (e.g. coconut milk, almond milk)
• Prozis Maple Syrup or Prozis Erythritol and Stevia Sweetener
Work your magic:
1. Sift your matcha to avoid any lumps.
2. Spoon the matcha into a large mug. Add the hot water and whisk vigorously in an up and down motion until frothy. Add the milk/plant-based beverage and whisk until well combined.
3. Add more water, coconut milk and/or sweetener to taste.
Matcha Pancakes
Ingredients:
• 1 cup Prozis coconut or almond flour
• 1 tbsp Prozis matcha powder
• 2 tsp baking powder
• ¼ tsp salt
• 1 cup milk or plant-based beverage
• 1 large egg
• 2 tsp vanilla extract (optional)
• ¼ cup Prozis white chocolate chips
Work your magic:
1. Whisk together the coconut or almond flour, matcha powder, baking powder and salt in a large bowl. Make a well in the center of the mixture. Add 1 cup plus 1 tbsp milk/plant-based beverage, the egg and vanilla (optional) to the well. Whisk the batter briefly until only a few small lumps of flour remain. Add the white chocolate chips and stir briefly again.
2. Heat a nonstick pan over medium-low heat. Place 2 to 3 spoonfuls of batter in the center of the pan, spreading it with the back of the spoon. Cook for about 1 minute, until small bubbles rise to the surface and burst. Flip the pancake and cook for about 1 more minute, until the edges are lightly golden brown. Repeat with the remaining batter.
