About Turmeric

It is a low-growing tropical herbaceous plant that forms many long, thin rhizomes. In the modern world, it is known as the main ingredient in curry powder. It was probably first cultivated to be made into a dye and then became valued both as a spice and for its use in cosmetics.


Turmeric Pumpkin Soup

Ingredients:

• 1 tbsp olive oil

• 1 medium yellow onion, chopped (about 1 cup)

• 3 cloves garlic, minced

• 2 tbsp sage, minced

• 4 cups water or vegetable stock

• 2 cups pumpkin, chopped

• 2 cups white kidney beans, cooked

• 1 tsp Prozis Turmeric Powder

• 1/2 tsp nutmeg

• 1 tsp salt

• pepper to taste

As if by magic:

1. Heat the olive oil in a saucepan, add the onion and sauté over medium heat until translucent.

2. Add garlic and sage. Fry for a few seconds.

3. Add the remaining ingredients, bring to a boil and cook for about 30 minutes.

4. Puree the soup and season to taste.

Golden tip: Garnish with pumpkin seeds and a little coconut milk!


Fish en papillote with turmeric butter

Ingredients:

• 100 g salted butter at room temperature

• 1 tsp Prozis Turmeric Powder

• 1 zucchini, sliced

• 1 lemon, sliced

• 1 large fillet of white fish (we used ling)

• 1 cup cherry tomatoes, halved

• 1 cup coriander, chopped

• Salt to taste

• Baking tray

As if by magic:

1. Preheat a convection oven to 160°C.

2. Mix Prozis Turmeric Powder with butter until fully combined and store in the fridge.

3. Layer lemon and zucchini pieces on a large sheet of baking paper and place the fish on top. Place pieces of butter on top along with the cherry tomatoes and coriander.


4. Fold the edges of the baking paper over the fish and twist tightly. Place on a baking sheet and bake for 15-20 minutes.


Golden tip: Wrap leftover turmeric butter in plastic wrap and store in the fridge. Use it to season meat or to finish off a risotto!
