The hook truffle (Tuber uncinatum Chatin) is a variant of the coveted black truffle. It has a rough and warty black outer surface, while the inner glebe is brown with very fine and branched white veins.
Harvest time: The harvest of the black hook truffle takes place from October to December, in the autumn months, and represents a variant of the black summer truffle.
Aroma: The aroma of the hook truffle is very fragrant, with hints of hazelnut and earth, more delicate than that of the coveted black truffle. The flavor is sweet and slightly less intense, but is still appreciated for its versatility in the kitchen.
This truffle is excellent on pasta, egg and meat dishes and is often used to flavor autumn dishes.
